Rotkohl (Spiced Red Cabbage)

  • Heat the lard over medium heat in a sauce pan.
  • While the lard is heating, grind cloves, allspice berries, and juniper berries in a spice grinder or mortar and pestle.
  • When lard is melted, add red cabbage, and spice mixture.
  • Fill empty cabbage jar half way with water and pour into sauce pan.
  • Add a splash of the sweet vermouth.
  • Boil for 30-45 minutes, stirring frequently.
  • After most of the water is evaporated, add salt and sugar to taste.
  • Either eat hot or put it in the fridge and eat cold.
  • Enjoy!
