  • Sieve flour and salt into mixing bowl.
  • Cut fat in flour into small pieces.
  • Mix to stiff dough with cold water and added lemon juice.
  • Turn on to lightly floured board.
  • Roll into strip about 0.5 cm thick.
  • Keep ends square and sides straight.
  • Fold pastry by bringing side edges to middle, then top and bottom edges to middle. Fold in half.
  • Press edges together.
  • Whenever possible put into cold place for 10-15 minutes between rolling. Half turn roll out and fold again as before.
  • Re-roll and use as required.
