"A sandwiched biscuit/cookie recipe originally from South Africa. Depending on how you shape it, it's as good for weddings as it is as an everyday cookie recipe... and relatively easy to make. NOTE: Please don't follow the cooking/prep time and serving, I just guessed on that, sorry :("

  • Cream butter and sugar until light and fluffy.
  • Add eggs and vanilla essence to creamed mixture, beat a little longer (2 minutes or so).
  • Sift dry ingredients, add to mix and make dough.
  • Roll and cut small identical sized biscuits, or roll small even-size balls and flatten slightly with hand or use a biscuit-press (which is what I use for these).
  • Bake at 170°C or 325°F until slightly golden at edges - or lift up the biscuit, if it is light brown under it's done.
  • Cool on rack.
  • Once cold sandwich together with 'Icing' and sprinkle with castor sugar.
  • Icing: Cream together with mixer.
  • Note: Castor sugar is finer than granulated sugar (in the US look for superfine sugar).

  1. I am not sure about the corn flour in this South African cookie recipe. Do I use corn starch or corn meal? Please help.

Hello.. welcome to my page, thank you for dropping by. I am ...*as my mom says* "jack of all trades, master of non"..hehe.. a freelance Graphic Designer + Fitness and Nutritionist, and ..well...when I'm not working, (winter is for hibernating)... I'm usually planning a party, and amazing food is always on top of my list!! *Zaars has been so helpful! ...thank you to everyone, you really are all wonderful to share so many good recipes* Things I enjoy... drawing, everything to do with bodybuilding, reading (I love reading recipe books.. and I know they are others here who do too..(so now I don't feel weird..hehe), baking, trying out new foods (cooking and eating!), painting (well, everything art related).. at the moment attempting mural painting! I've been cooking since I was 10 (way back then..hehe).. but it's amazing how much there is about cooking/baking/food that I still have yet to learn. I prefer cooking from scratch (it's just the way everyone in my family cooks).. and so, I usually skip 'box cake' recipes, etc. I have a passion for 'international recipes'.. and usually that's the first dishes I will try to make. (I have a some what muddled up background, so this makes everything international to me..hehe wonderful huh?) One of my favourite cookbooks is 'The Around The World Cookbook' ... it's the one book I seem to follow the the recipe as is.
