- 3 -4 chicken breasts
- 1 (12 ounce) bottle creamy Russian salad dressing (if not creamy Russian, then plain Russian with 1/4-1/2 cup of light Mayo)
- 8 ounces apricot jam
- 1 1⁄4 ounces French onion soup mix
- jasmine rice
directions
- Mix the Russian dressing, apricot jelly, (mayo if applicable) and french onion soup.
- Stir until well combined in separate bowl.
- Place chicken in glass baking pan.
- Pour dressing mix over chicken and bake uncovered at 350°F for 40-50 minutes, until chicken is cooked through.
- Served best over Jasmine rice.
- Enjoy!

Mmmmm! I used a pork loin as previously suggested instead of chicken and cooked it in the crockpot. I also did not have russian dressing so I used recipe #38106 for Russian Salad Dressing and added the suggested mayo to make it creamy. Oh, and I already had peach jam open so I used that instead of apricot. Despite all my minor substitutions, I feel I can still vouch for this recipe....it is good!

In the NY area, Russian dressing is always creamy. You can make your own by blending together 1/2 c mayo, 1/4 c tomato ketchup, 2 tbsp lemon juice, a pinch of salt and a pinch of ground white pepper. You can also substitute Thousand Island dressing, which is the same as Russian, with the addition of chopped pickles.

This is an awesome recipe, helthyeeter :) Just an FYI for people who havent made this, in my experience this does NOT work well with boneless breasts. You really need to use bone-in chicken. It also works very well on a pork roast, thats our favorite way of serving this dish. In a pinch you can also use Catalina dressing. When I got the recipe about 20 years ago from a girlfriend, she called it Chicken Delite. We like to put the sauce over mashed potatoes. I will have to try adding the mayonnaise, as I have never seen a "creamy" Russian Dressing. That will definitely be interesting. Thanx for sharing this :)
