  1. Cook the bacon in a large stockpot, remove and sit aside.
  2. Drain all but one tablespoon of the fat.
  3. Cook onions, celery and pepper until tender.
  4. add everything but cream and cheese and bacon and simmer 30 minutes.
  5. pour cream in and simmer 10 minutes more.
  6. top with crimbled bacon, cheese.
