ingredients
- 1 cup mayonnaise
- 3 tablespoons lemon juice
- 2 tablespoons sugar
- 1 teaspoon salt
- 6 cups cabbage, Shredded
- 1⁄2 cup green pepper, Finely Diced
- 1 cup carrot, Shredded
directions
- Combine the first four ingredients and pour the mixture on the vegetables. Stir in remaining ingredients. Cover and Chill. This recipe makes 6 cups.

Mmm, what a tasty coleslaw! I love how fresh and light it is. I used a red pepper in place of the green as that is all I could get and loved the pop of colour as well as the taste it added. YUM!<br/>I made quarter the recipe using yogurt for the mayo and reducing the sugar a tad. This was wonderful, thank you so much for sharing it with us, Lynnster.<br/>Made and reviewed for the Best of 2011 Tag Game January 2012.
