Ruths Holiday Broccoli Cheese Casserole (no Rice)

"This recipe was given to me by a friend of my Mother's and it combines the perfect partners of broccoli and cheese to make broccoli "a star"."

  • Cook broccoli until tender but not overcooked; drain well.
  • Place cooked broccoli into a pre-sprayed casserole dish.
  • Mix cream of mushroom soup, sour cream, onion, and 1 cup of shredded cheese together.
  • Pour over the broccoli in the casserole dish.
  • Sprinkle desired amount of croutons over the top.
  • Top with remaining 1/2 cup shredded cheddar cheese.
  • Bake at 350 for 20 minutes.
  • You may substitute cauliflower for the broccoli.
  • I sometimes add cooked turkey, chicken or ham for a complete one dish meal.

  1. I looked up chicken and brocolli without rice as I am eating lower carbs. I am soo glad that I found your recipe! I didn't have any cream of mushroom soup on hand so I used real mushrooms, sautéed with the onions and added Sour cream and cheese to that mixture. We had leftover hot breast (hot wing sauce and garlic on Chicken breast) so I diced that and added it over the brocolli. I omitted the croutons since lowering carbs and added a few shakes of red pepper flakes. It is wonderful! This will be our go to leftover hot breast dish!

  2. My whole family loved it! All three kids, plus my husband, plus me! I've tried a LOT of broccoli casseroles, and this is the first one that has passed the whole-family-took-seconds test! I followed as directed, but used "light" sour cream, and I also sauteed the minced onions in butter before adding them. Mmmmm. Delish! It also looks quite pretty. And, it is super easy! Thanks!

Tweaks

  1. Omit croutons and cream of mushroom. Sautéed thinly Sliced Mushrooms with diced onion in butter. I added about 6 shakes ( I rarely measure) of hot wing sauce over the mixture before adding the cheese. I added diced seasoned chicken breast to make it a complete meal casserole.

I cooked professionally for about 25 years and now I'm retired and enjoy being home and making cookies for the grandchildren and other family members. I love preparing and cooking food. This time of year (winter) its Soups and Stews, but I certainly don't limit myself to that because in the summer my favorites turn toward salads both vegetable and fruit. My most often requested dishes are Green Chile, Italian Tortollini Soup and a cookie recipe.
