  • Cook the beans.
  • Peel and slice the potatoes and boil them.
  • In a large pan, bake the chopped onions in butter until glazed.
  • Add the chopped bacon.
  • Finally add the beans and the potatoes to the onion-bacon mixture and bake for another 5 minutes on medium heat.

  1. I made a few changes to this recipe to reduce the amount of fat as well as reducing the quantity of potatoes, bacon and onions. The bacon was cooked until crisp and drained. I used 1 onion which was cooked in the pan that was flavored with the bacon. The amount of potatoes was reduced by half and since I used white rose potatoes, I scrubbed them and left the peel on. The beans were rinsed and then steamed in the microwave. I added a sprinkling of salt and pepper before serving. With the changes I made I still had enough for 4 servings as a side. We enjoyed this dish with grilled salmon.
     
  2. This is not the original recipe. This recipe is from my home town and I have had it hundreds of times. The original recipe involves cooking the bacon and deglazing the bacon grease with white wine vinegar to douse the dish with.
     
  3. This was absolutely delicious. I boiled some tiny (unpeeled) new potatoes and the beans together until tender. I sauteed the onions and bacon together and when the bacon was cooked, but not crisp added the beans and sliced potatoes until heated through and coated with bacon grease. I just seasoned with a little salt and pepper and they were divine! I cut the recipe in half for my husband, my son, and me and wish I'd made the whole recipe.   4. Simple and tasty! I followed the previous reviewers and blanched the beans and sauteed the onion in the bacon drippings. Yum! Thanks for posting! Made for ZWT 4.
     
  5. The only change I made was to saute the onions in the bacon grease (left over from frying the backon crisp) instead of butter. I used red potatoes and left some of the skin on. This was absolutely delicious, and enjoyed by all.

I'm the mother to two boys (Yaron °2002, Noah °2004) and I am happily married since 2000. I work as an administrative assistant in a primary school. I have liked cooking since I was a little girl, strangely enough, my mother never really enjoyed cooking, so I don't know where I am getting it from. Cooking is really taking a break for me (at least of my two boys will leave me to it). I try to involve my kids as much as possible in cooking and they already enjoy making cookies, cakes and popsicles. I like to bake so when it's their birthday I let them choose their favourite cake. This year I made a pirate ship for the youngest one and a treasure chest for my oldest. I am active in my children's school and I like to craft when there's time left, which isn't too much lately. Every night before I go to bed, I need to read at least a chapter in a book. It has become such a ritual that it is hard to sleep when I haven't. I do have quite a few cookbooks, but the ones I would miss the most if I'ld lost them (even if I don't make that much recipes out of them) are my great grandmothers cookbooks, which are partly just little pieces of paper with a recipe scribbled onto it. I also really like the cookbooks and tv-shows of Jamie Oliver and Nigela Lawson. I really like the countryside, even if I don't really live in it. (I live in a suburb of Bruges) My dream is to one day buy a small little farmhouse with just a few animals and a beautiful garden, where I could grow some veggies to can in summer. Well, one can dream can we...
