  • Combine water and tomatoes. Cover; let stand 10 minutes. Drain; set aside.
  • Combine butter and oil in an 8-inch square baking dish. Microwave at HIGH 2 minutes.
  • Stir in onion; microwave at HIGH 3 minutes.
  • Stir in rice; microwave at HIGH 2 minutes.
  • Stir in broth, salt, and pepper; microwave at HIGH 9 minutes.
  • Stir in tomatoes and chiles; microwave at HIGH 8 minutes.

  1. So yummy! A great side dish. This is your dish if you need to put more effort into a another dish. I used oil packed sun dried tomatoes and put the tomatoes b/n a couple of paper towels to soak up the oil. No need to soak if you used the oil packed tomatoes. I love the zing of the green chilies. This was wonderful!
     
  2. This was a great spicy sort of Southwest risotto. I also love the method. I decreased the salt, omitted the butter and served it with nonfat sour cream. I have been making Recipe #315371 for years, but this opens more options. And the end result is still wonderful! Served 2-3 as a main course.
     
  3. I love this recipe. I've made it twice--once without onions, which was still delicious--and once with red onions and a handful of crumbled bacon, which made a superb one dish meal. Both times I used sun-dried tomatoes in oil (drained) and Smart Balance instead of butter.
     
  4. Lazyme - tried to make risotto once and found it was sooo much work... never made it again!!! This risotto was easy, fast and sooooooo good!!! Thank you, thank you, thank you lazyme!!
     
  5. Very good and oh so easy, I used jalapeno peppers in place of the chilies, since I have tons that I froze from my summers crop, I did use fresh garlic with the onion and adjusted the salt and pepper amount, thanks for sharing hon!...Kitten :)
