- 3 tablespoons coconut oil
- 1⁄2 cup celery, chopped
- 1⁄2 cup onion, chopped
- 1⁄2 cup green pepper, chopped
- 2 garlic cloves, minced
- 1 cup potato, diced
- 2 cups chicken broth
- 1 cup carrot, shredded
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon pepper
- 3⁄4 teaspoon dried dill
- 1 (14 ounce) can cream-style corn
- 1 (14 ounce) can coconut milk
- 1⁄4 cup half-and-half
- 2 cups cooked salmon (bones and skin removed)
- 2 teaspoons hot sauce
- 2 teaspoons dried thyme
directions
- Melt coconut oil over medium heat in a skillet.
- Add next 4 ingredients and saute until just tender.
- Add next 6 ingredients and bring to a boil. Reduce heat and simmer for 40 minutes.
- Add the remaining ingredients and simmer for at least 15 minutes.
