Salmon in Parchment Paper

ingredients
- 1 lb salmon fillet
- 1 tablespoon butter
- 1 lemon
- 3 -4 sprigs fresh dill
directions
- Set your oven to 350. While it is heating up place a piece of parchment big enough for your fish on a cookie sheet.
- Place the fish on the parchment and then slice your butter into small pads and place on fish. Slice the lemon and place a 2-3 plices on fish and then lay dill on top.
- close up the parchment and place in oven.
- Cook for 25-30 minutes.

This was very good, and gets points for ease! I was able to throw this together just about as quickly as I could rip the sheet of parchment off the roll and slice the lemon. 5 minutes prep is no joke. The flavor is mild, and was pleasing to my whole family, including kids. I added salt and pepper, and next time I might add some garlic or onion, too, just to round out the flavors more. But excellent as is. I might also add that I made a much larger filet, which fed 6 people tonight. Thanks, Gone Fishin! Made for PAC Fall 2008.

<br>My favorite town is Santa fe, NM and my favorite restaurant in The Compound on Canyon Road. The Ruby Red Grapefruit Martinis are the best. Also love Santacafe.
