"Salmon" Janet Evening Salad

"The title of course is a play on words from the song "Some Enchanted Evening." We previously submitted our tuna macaroni salad recipe and were glad that some of you enjoyed it. We experimented with using canned salmon instead of tuna and it was just as delicious as the other recipe. It was an unexpected taste for some of our friends. I hope you enjoy it as much as we."

  • 6 -7 ounces small shell pasta
  • 4 cloves garlic, minced finely (can use garlic powder if desired, but not garlic salt)
  • 2 (6 ounce) cans boneless skinless salmon
  • 1 cup shredded sharp cheddar cheese, to taste
  • 13 cup minced onion (grated if you wish)
  • 12 cup salad dressing (not lo-fat)
  • 34 teaspoon salt
  • 14 teaspoon pepper
  • 12 cup sweet pickle relish
  • 4 stalks celery, diced

directions

  • Cook Macaroni AL DENTE.
  • Drain and rinse with cold water.
  • In a large bowl, combine macaroni, cheese, salmon, relish and onion.
  • In a separate bowl, stir together the salad dressing, salt, pepper and garlic.
  • pour over macaroni mixture and stir to combine.
  • Cover and let chill for at least 3 hours.
  • Makes 6 to 8 servings.
  • Can be doubled.

My spousal unit and I live in Mesa Arizona and love the heck out of it. I was trained in Culinary Arts and Restaurant Management but due to disability am unable to pursue that career. I enjoy cookbooks, cooking websites, cooking magazines (Taste of Home, etc.). I have many cookbook gleaned from the shelves of used book stores and from church bake sales. I have also placed all my recipes on a disc and probably have 1000s myself. My wife is GREATLY disappointed that I wont let her cook. (She says I let her cook...I just won't eat anything she makes!) The picture on my icon is of my Great Zeyda "Wolf" Ginsberg who was known as the "Rabbi of Des Moines". This was a very old picture taken with a camera using flash powder for lighting. The couple in Renaissance garb is me and my DG. This is our wedding picture and the "wench" sitting down is "My Yiddishe Mama"
