  1. Mix all ingredients of cucumber sauce together and refrigerate until ready to serve.
  2. Drain salmon, reserving juice; discard skin and bones. Add water to salmon juice to make ½ cup.
  3. Combine liquid, salmon and remaining ingredients in large bowl. Spoon into a greased loaf pan. Bake at 350 for 30-40 minutes. Serve with cucumber sauce.
