Salmon Pasta Salad

"This looks like a great summer salad that could also serve as a make ahead main course. Haven't tried it yet, so I am guessing at the amount of servings."

  • In a large bowl, toss together the pasta, salmon, tomatoes and onion.
  • Whisk together dressing by combining oil, lemon juice, dill, garlic, and salt and pepper.
  • Pour over pasta mixture, cover and chill.
  • Serve over bed of lettuce.

  4. Very tasty and easy salad. I had it on the table in under 30 minutes. The only change I made was to serve it on different salad greens instead of iceberg lettuce. I served it with crackers and lemonade for a refreshingly cool dinner on a hot day.
     
  5. What a delicious way to use up leftover salmon! I had baked salmon last night and had plenty leftover for this salad and no one would have ever known I was serving leftovers! I used rotini pasta and grape tomatoes and served on the bed of lettuce as Marie suggested.The combination of tomatoes, salmon and the red onion is just terrific. Wonderful supper, wonderful salad!
