  • Combine salmon, mayonnaise, yogurt and chili powder.
  • Add carrot, green onion, tomato, avocado and coriander, salt and pepper to taste and stir gently.
  • Wrap tortillas in foil and warm in 350° F (180° C) oven for 5 minutes.
  • To assemble: lay tortilla flat on each plate Top with lettuce leaf; spoon mixture down center of tortilla Fold edged over to form cone.

I live in Marietta GA and I'm a stay at home, married mommy of two small boys ages 2 and 4. My favorite cooking appliance in the entire world is my Faberware stand alone pressure cooker. I can’t believe that pressure cookers are not more popular since they are not the unsafe exploding variety anymore. I love to quickly throw in a bunch of ingredients and push the cooking time and walk away. I come back less than an hour later and I have a wonderful dish that tastes like it’s been cooking all day long. My husband loves to cook on his big green egg smoker. I have also been experimenting with smoked veggies and they are incredible! I own quite a few cookbooks, and I’m always looking for great recipes that will become standards. My current culinary goal is to compile my “keep and remake” recipes into my own binder which I can easily refer to when I need prepare something. I want to become organized with my recipes and I don’t want my husband to say how come you never made that great lasagna ever again and I have to say I have no idea where the recipe is! I'm an avid gardener and have been growing my one herbs and increasing the number I have each year. Rosemary is my favorite and it's so much better fresh out of the garden.
