Directions

  1. Rub the inside of a large frying pan with the cut end of the clove of garlic. Heat the oil and saute the shallots.
  2. Add the salmon fillets and cook for approximately 10-15 minutes turning once. Remove from the heat and keep warm. Add the tomatoes, balsamic vinegar and the torn basil leaves to the pan, cook gently for 5 minutes.
  3. Serve the salmon, tomatoes and shallots on plates, drizzled with the pan juices.
