  1. Steam carrots in micro for 2 minutes. Drain.
  2. In large skillet that can be covered, heat oil and butter over medium heat until hot. Add onions, carrots and garlic. Saute vegetables until they begin to brown, but not burn! Add 1/4 cup white wine.
  3. Place salmon filets on top of vegetables and sprinkle with salt, pepper and dill weed.
  4. Cover skillet and steam salmon approx 15 minutes or until flaky. Remove salmon to platter and pour vegetables and juice over all.
