Salmon With Four-Citrus Sauce

- 4 salmon fillets
- 3 medium shallots
- 1 cup fresh dill
- 1⁄2 cup fresh squeezed lemon juice
- 3⁄4 3/4 cup grapefruit juice or 3/4 cup lime juice
- 4 cups white wine (Sauvignon Blanc)
- 1⁄3 cup butter cooked rice
- 8 slices oranges or 8 slices grapefruits
directions
- Finely chop the shallots.
- mince fresh dill.
- Squeeze 1/2 cup lemon juice.
- Add 3/4 cup of other citrus juices.
- Season salmon with kosher salt, coarsely ground black pepper, minced dill.
- Heat large pan over medium-high heat.
- Melt Tablespoon of butter.
- Add salmon skin down, cook 2 minutes.
- Cook 2 minutes other side.
- When flesh side is slightly seared remove salmon and reserve on plate.
- Cook shallots until soft.
- Add white wine to deglaze plan, stirring with a wooden spoon.
- Reduce to thin syrupy consistency.
- Add juices, reduce in half.
- Add dill to pan and add salmon back to pan to warm.
- Serve on a plate or bed of rice with sauce spooned over.
