  • Finely chop the shallots.
  • mince fresh dill.
  • Squeeze 1/2 cup lemon juice.
  • Add 3/4 cup of other citrus juices.
  • Season salmon with kosher salt, coarsely ground black pepper, minced dill.
  • Heat large pan over medium-high heat.
  • Melt Tablespoon of butter.
  • Add salmon skin down, cook 2 minutes.
  • Cook 2 minutes other side.
  • When flesh side is slightly seared remove salmon and reserve on plate.
  • Cook shallots until soft.
  • Add white wine to deglaze plan, stirring with a wooden spoon.
  • Reduce to thin syrupy consistency.
  • Add juices, reduce in half.
  • Add dill to pan and add salmon back to pan to warm.
  • Serve on a plate or bed of rice with sauce spooned over.
