  1. Spray the inside of a 3 qt crock pot with non-stick cooking spray and arrange chicken breasts in the crock. Pour salsa over the chicken and drizzle lime juice or wine over the top.
  2. Cover and cook on high for 1 1/2 to 2 hours, until the chicken is tender and cooked through. The chicken will make it's own juice as well.
  3. Lay cheese over each breast (or sprinkle with 2 oz crumbled goat cheese), cover and let stand 10 min before serving to melt the cheese. Serve immediately.
