- 3 large tomatoes, cored and halved
- 1⁄2 cup red onion
- 2 cloves garlic
- 2 jalapenos, seeded and minced
- 3 teaspoons cilantro
- 1 teaspoon vegetable oil
- 1 teaspoon lemon juice
- salt and pepper
directions
- Squeeze out the seeds and place them cut side down and roast under a broiler till skins brown/blacken.
- Cool Peel Chop Mix with other stuff.
- Let stand 15 minutes.
- Toss well.
