- 1 1⁄2 lbs whole roma tomatoes, unpealed
- 1⁄2 medium onion, cut into chunks
- 1⁄4 cup fresh cilantro, chopped
- 2 -3 fresh jalapeno peppers
- 2 garlic cloves
- 1 1⁄2 teaspoons salt
- 2 -3 tablespoons vinegar (cider or cane)
directions
- Heat broiler. Place tomatoes on a small baking sheet lined with foil. Broil 15-18 minutes, turning a couple times until soft, skins have split, and there are some dark spots. Allow to cool slightly.
- Place tomatoes with rest of ingredients in a blender. Puree. Serve warm or refrigerate for later use.
