Lovely flavour!! We enjoyed this meatloaf very much, great flavour with all the veggies, herbs and seasoning. We loved the touch of salsa, gave it a nice little zing. I used onion, garlic, parsley, green and yellow sweet pepper, I can't imagine using more veggies as it was it did not hold together well for slicing when hot, but I was surprized how well it sliced to serve it cold the next day. It was even more flavourful the next day as part of a "winter picnic" supper. Thanks for posting, I will make this one again.
