ingredients

1 lb lean ground beef
1 ¹⁄₄ cups salsa (mild, medium or hot, as you prefer)
³⁄₄ cup rolled oats
2 plum tomatoes, diced
¹⁄₂ cup mushroom, diced
³⁄₄ cup carrot, grated

directions

Oven at 350°F.
Combine all ingredients and mix well.
Pour into a loaf pan.
Bake for 65-70 minutes.

Used a chunky, medium salsa in this recipe & left out the mushrooms! I domed it in a circular baking dish & it was done in just over an hour! Very nice taste! [Made & reviewed for one of my adopted chefs in this Spring's PAC]
