ingredients
- 2 garlic cloves, peeled
- 1 small red onion, peeled and halved
- 2 jalapeno peppers, quartered
- 2 sprigs fresh cilantro, stems removed
- 1 teaspoon dried oregano
- 1 teaspoon lime juice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon fresh ground black pepper
- 2 large beefsteak tomatoes, coarsely chopped
directions
- Place garlic, onion, jalapenos, cilantro, oregano, lime juice, salt and pepper in bowl of food processor. Pulse until onion and jalapenos are coarsely chopped.
- Remove to a bowl and stir in tomatoes. Mix well. Chill for 1/2 hour to blend flavors.

Except for using just 3/4 of a large jalapeno, I followed the rest of the ingredient amounts & we were happy with the results ~ Very satisfied with this not-too-hot-for-us salsa (though I can see making it with the full heat for several of our friends)!
