  • Place first 5 ingredients in a food processor, and process until minced.
  • Combine onion mixture, lime juice, salt and drained tomatoes in a medium bowl. Stir until well blended.

  1. Made for Fall PAC 2012 and this was a great one! The only change I did was for the one can of tomatoes I used a small can of rotel (that was what I had left in the pantry). Delish. Thank you for posting.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now. I am not vegetarian but I cook with more vegetables than meat now. I enjoy sharing desserts with family and my co-workers.
