  1. Heat a grill pan (or skillet) over medium high heat.
  2. Grill pineapple slices for 5 minutes, turning once.
  3. While pineapple grills, chop bell pepper (I used orange but you could use any color pepper you want) and onion and quarter tomatoes. Place in a large bowl.
  4. Chop grilled pineapple and place in bowl with other ingredients.
  5. Chop cilantro and add to bowl.
  6. Drizzle with EVOO. Add salt and pepper.
  7. Mix and serve.
