Directions

  1. Wash salsify, scrape roots and place immediately in cold water, adding vinegar to prevent discoloration.
  2. Cut in half lengthwise and cook in boiling water until tender, approximately 30 minutes.
  3. Dip cooked pieces in beaten egg, sprinkle with salt, roll in cracker crumbs and fry in butter until golden.
