  • Place the potatoes and water in a large pot.
  • Pour the salt over the potatoes, cover, and bring to a boil over high heat.
  • Reduce the heat to medium and cook for 25 minutes, or until the potatoes are fork-tender.
  • Serve with the melted butter for dipping.

  1. Yep, made these just as directed, and came out beautifully. The cup of salt mixes within, and it's not like you are putting a cup of salt on the potato at the end. The potato just comes out so good, you will be so surprised. This is one top notch recipe, and will use this often as special tater'. Thanks!
     
  2. I was raised in the Finger Lakes Region of NY State. I find salt potatoes a nice dish to bring to gatherings, but rather than having butter on the side for dipping I put them in a large slow cooker with melted butter for serving. Since I now live in the mid-west it is something new for others to try.
     
  3. I am not a huge fan of potatoes, but I was looking for an easy potato recipe that could feed a lot, or a little. I tried this recipe and only cooked about 10 red skinned new potatoes. They were really very good, the salt gets into the flesh of the potato without being too salty. Between the salt, and the creaminess of the potatoes I found the butter superfluous. Great, will use this recipe again.
     
  4. We absolutely loved these potatoes! I used white rose potatoes that were not very small, so I cut each one in half before boiling. We tried these also with ketchup and a mayonnaise based dipping sauce, but we liked them dipped in butter the best. DH has a bad habit of salting food before he tastes it, so I warned him on this one to taste first. The amount of salt boiled into the potatoes was just right.
     
  5. We LOVE salt potatoes and these are great! Takes us right back to our camp in the Adirondacks!!! I made as posted using kosher salt and small new potatoes I bought at the farmer's market today. Very yummy! Thanks for posting!!!

Tweaks

  1. I also have enjoyed adding garlic and onion as the potatoes boil and to the butter. I suppose that you could add some garlic salt.
