ingredients
- 20 large fresh strawberries
- 40 caramels
- 3 tablespoons whipping cream
- 1⁄4 teaspoon salt
- 1 1⁄4 cups coarsely chopped mixed nuts
- wax paper
directions
- To prepare strawberries do not remove green caps before washing. Water will seep into the berry, softening the texture and weakening the flavor. Wash strawberries just before using then patting dry with paper towels. (Caramel mixture will not stick to wet strawberries.).
- Microwave caramels, 3 tablespoons whipping cream and 1/4 teaspoon salt in a 1-quart microwave-safe bowl at MEDIUM (50% power) for 3 1/2 minutes or until smooth, stirring at 1-minute intervals.
- Dip each strawberry halfway into caramel mixture. Roll in nuts and place on lightly greased wax paper. Let stand for 15 minutes. Serve immediately or cover and chill up to 8 hours.

Was hoping to make these for Valentine's Day, but when I had the opportunity to buy some great-looking strawberries, I did so & made them up yesterday! OUTSTANDING! REALLY, REALLY GREAT TASTING, & as much as I like chocolate, these are a very nice change from the chocolate coated berries! [Made & reviewed as a recipenap in the Aus/NZ Recipe Swap #37]

Wowser!!! These are fantastic!! I have had many chocolate covered strawberries and wasn't sure how these would compare and they exceeded my expectations!!! I love the combination of the sweetness from the strawberries and caramel with the saltiness of the nuts (I used peanuts). Thanks for sharing. Made for Holiday Tag.

Step aside, caramel apples...there's a new kid in town! We don't own a microwave and I placed a metal bowl over a pot of simmering water, carefully melting the mixture over low-medium heat. Easy, inexpensive and delicious! Used Oregon-grown hazelnuts and strawberries from California (they're not growing here locally yet). I was out of heavy cream and subbed whole milk with no problem. A good way to use up caramel candies left over from Christmas baking/cooking. Next time I'll make my own caramel sauce. Thanks for posting. ~Tasty Dish~ approved!
