"Don't be fooled by the Quesadilla in the title. This is not like Mexican Quesadillas. This is a sweet bread or muffin that is served often with coffee."

  1. Love this recipe but we use feta cheese instead. Great with a fresh cup of coffee. Definitely not low fat. MMMM brings back great memories.

  2. This is exactly what I was looking for! Our friends from El Salvador serve this with Pupusas, and it is wonderful! One note- either use fresh grated parmesan or canned grated parmesan. DO NOT use canned shredded parmesan (the kind you get in the refrigerated section), because it doesn't melt into the batter, and makes the texture a little weird.

  3. i love the salvadoran quesadillas. thank for the recipe

I am 25 years old and I work in HR. I love the outdoors especially here in luscious Washington. I also am an avid gardener and since we only have an apartment I've filled up my balcony with yummy veggies and herbs. My husband and I just got married in March and discovered that one of our favorite things to do together is cook. We love to experiment with new recipes and this site has been such an inspiration for us. We are big fans of Iron Chef America and always want to cook exotic things after we watch it. We also like the praise we get from our family and friends when we try out new dishes on them.
