Directions

  1. Beat eggs.
  2. Add oil, sugar and vanilla.
  3. Beat until thick and foamy.
  4. Stir in zucchini.
  5. Mix dry ingredients.
  6. Gently stir into zucchini mixture and mix until just blended.
  7. Fill two greased loaf pans and bake at 350 for 60 minute.
