Directions

  1. Whisk egg whites in a bowl, one at a time, until stiff but not dry.
  2. Add sugar and mix well.
  3. Add flour, salt, cocoa powder, baking soda and baking powder.
  4. Mix well.
  5. Cream in the melted margarine.
  6. Preheat oven to 175°C.
  7. Grease a square shaped 9 inch baking pan.
  8. Stir in the orange juice and essence so that you have a smooth batter.
  9. Pour the batter into the greased pan.
  10. Bake in a pre-heated oven at 175C for 25-30 minutes or until a toothpick inserted in the cake pulls out clean.
  11. Serve warm/cool.
  12. Note: If serving this cold, sift icing sugar over this.
