Directions

  1. Heat oil in a large skillet over medium-high heat. Add green peppers & onions. Cook till tender-crisp.
  2. Add salsa, beans, corn & rice. Cook till thoroughly heated.
  3. To Serve: For each serving -- Place 1 cup lettuce on serving plate, surround lettuce with tortilla chips, top with warm vegetable mixture, sprinkle 1/4 cup cheese evenly on top of each serving & garnish with sour cream.
  4. If your diet can bear it, some sliced avocado would also be a wonderful addition.
