Sara's Feta Walnut Tuna

"This is something that I like to throw together for a quick lunch or dinner. I almost always have the ingredients on hand. I usually serve it on Wasa crackers with cheddar cheese melted on top, but it's good on bread or by itself too."

  1. A great tasting tuna salad. Goes directly into my "Everything Tuna" cookbook. Made as an open faced sandwich on lightly toasted bread. Nice lunch, Sweety. Thnx for sharing your recipe. Made for PAC Fall 2009.
     
  2. I have tuna salad for lunch fairly often. So, it is always nice to find a new way of doing it. I wasn't sure what this version would be like but ended up enjoying it. The freshly toasted walnuts I used added a real richness. I used reduced fat feta so I could feel okay about the nuts. I served it on some slices of wholemeal bread and a alongside a green salad and it made for a nice lunch. I think the only thing different I might do next time is put in some herbs. Made for PAC Fall 2008.

My name is Sara. I live in Portland, OR and I work at a retirement community in the Wellness department. I love to cook! I occasionally do cooking demonstrations at work and typically have over 40 people! This is a lot considering I have no professional training, and I never really cooked at all until a few years after high school. I try to focus on cooking healthy foods, though I believe if you're going to indulge you might as well go all the way (case in point: Black Forest Cake)! I'm always looking for new and unusual recipes and my main source is the net, currently 'zaar. I've been more successful here than anywhere else!
