Sardines in Tomato Sauce

- 1⁄2 onion, finely chopped
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 2 large tomatoes, chopped
- 1⁄4 teaspoon fennel seed
- 1 (5 1/2 ounce) can sardines in tomato sauce
- 1⁄4 cup frozen spinach or 1/4 cup greens
- salt and pepper
directions
- Heat olive oil in pan.
- Add onion. Saute until clear.
- Add garlic. Cook one minute.
- Add tomatoes and fennel. Cook about 10 minutes, until tomatoes become a sauce and most of the liquid is evaporated.
- Add frozen greens and sardines with their sauce. Cook a couple more minutes, until warmed through.
- Season with salt and pepper.
- Serve over pasta, rice, or polenta. It's even nice just with some good bread.

I did this with a handful of green beens with the spinach. It doesn't look particularly appetising, so I haven't photographed it. It tastes lovely. My wife and daughter loved it too. It costs pennies to make, it made very little mess, the fennel went lovely but I used double the fennel seed. Considering I am very critical with food and wont eat rubbish and that this dish had fish, spinach and green beans in, none of which I like, it tasted fantastic. I never follow recipes because I always make nicer myself but having never used sardines before, I thought it would be a safer bet. Thank you for a brilliant, simple recipe. Any one reading this just watch towards the end if it starts to stick just add a little splash of water.
