  • Soak rolled oats in orange juice.
  • Stir the dry ingredients together. Make a well in the centre of the dry ingredients.
  • Pour in the rolled oats mixture and the saskatoon berries.
  • Fold together being careful not to overmix.
  • Spoon the mixture into 12 large muffin cups. Mix the last measurement of sugar and the cinnamon together and spoon on top.
  • Bake at 375F for 18 to 20 minutes.

  1. Delicious!!! I added the oil and egg to the dry then added the rolled oat mixture and berries...worked perfect. Another batch on the way!

  3. I bake a lot and I found the recipe quite poor. Like the other person commented there is no info on when to add the oil and egg and I found the batter very gummy and sticky. Extremely hard to work with. And they taste very mediocre. Sorry love this web site but not this recipe.
     
  4. Very good. I cut the oil back to ¼ cup and increased the OJ by ¼ cup. The muffins were still light and tasty.
     
  5. Very nice. I needed to add 1/4 to 1/2 cup more liquid, as I used mango juice

Tweaks

  1. I didn't have any orange juice, so I substituted it with apple sauce and cashew milk. I would just add a tiny bit more liquid next time.
