PEANUT SAUCE
- 3 -4 teaspoons smooth peanut butter
- 1⁄4 cup butter
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon salt
- 2 tablespoons soy sauce (Mr. Yoshida's Gourmet Sauce)
- 2 teaspoons lemon juice (I use the other half of the lemon's juice)
- 1 pinch fried shallot
directions
- Slice meat into 1 inch squares, set aside.
-
MARINADE:
- In large bowl, mix soy sauce, garlic, lemon juice, olive oil, salt and pepper. Add meat, and knead marinade into the meat. Cover and let stand at room temperature for a minimum of one hour. Refrigerate if marinating longer.
- Place meat pieces on skewers, barbecue until meat is cooked. They are thin pieces of meat so it shouldn’t take too long. Remember to turn frequently.
- Serve over bed of rice with peanut sauce.
-
PEANUT SAUCE:
- In saucepan, melt peanut butter and butter while stirring over low heat. After peanut butter is melted, add soy sauce and lemon juice, a little at a time to obtain the desired taste. After mixture is peanutty yet tart, you can add some salt and pepper to enhance the taste. Add the shallots.
