Sauerkraut Salad

- 1 1⁄4 cups sugar
- 3⁄4 cup white vinegar
- 1⁄4 cup canola oil
- 1 quart sauerkraut, rinsed and drained
- 1 medium onion, thinly sliced
- 1⁄4 green pepper, thinly sliced
- 1⁄4 red pepper, thinly sliced
- 1⁄2 teaspoon celery salt
- 1⁄8 teaspoon pepper
directions
- Combine sugar, vinegar and oil in a saucepan. Bring to a boil over medium heat. Reduce heat to low and simmer dressing, stirring occasionally, about 5 minutes. Cool.

- Combine sauerkraut, onion, peppers, celery salt, and pepper. Mix well. Pour dressing over sauerkraut mixture and toss to coat.
- Cover and refrigerate overnight. Drain before serving.

I live on an island off Sarasota, FL. and moved here from Illinois. I have always loved the beach and I think that possibly we have the best beach in the world. It's alwasy in the top ten beaches.
