  • Press excess juice from the sauerkraut.
  • Add green and red peppers (or use pimento for red color).
  • Add onion, celery, and carrots and mix gently.
  • Combine vinegar, oil and sugar and pour over vegetable.
  • Mix thoroughly and chill for several hours before serving.
