Sausage & Egg Pocket With Tomato Chutney

- 1 link sausage
- 1 egg
- 1 1⁄2 tablespoons water
- 1⁄2 pita pocket
- 1 1⁄2 teaspoons chutney
- 1 cherry tomatoes
directions
- Cook Sausage Link, while sausage is cooking, whisk egg & 1 1/2 Tbsp water together in a bowl. Cook egg mixture in a separate pan until firm and is no longer runny. Cut up cooked sausage link into small bits and combine with cooked egg. Remove egg from heat.
- Warm up 1/2 pita pocket in microwave for 20 secs or more until warm enough to split the pita open and create pocket. Place half the cooked egg mixture in the pocket and 1/2 the chutney. Layer the remainder of the egg mixture on top with the last of the chutney. Sprinkle diced cherry tomato on top and serve.
- Note: Homemade chutney made in advanced is always cheaper than purchasing a chutney from the store. An Apple & Tomato Chutney works best with this dish.

I couldn't wait to try this recipe, but I had to locate and make a recipe for chutney first. I chose (and was very happy with) recipe #198420. I then waited until DH's day off to make this breakfast. I used garlic and herb seasoned flatbread sandwich pockets, and made the recipe just as directed, except for about 5x the amounts. Everyone loved these sammies! I added some sliced jalapenos to mine to kick it up a bit. Thanks for sharing this recipe, Hope Rock! We'll be making it again for sure. Made & enjoyed for the Fall 2012 Pick-A-Chef event.
