Sausage Noodle Casserole

"Mom found this recipe in a magazine so long ago it's lost to memory! But it became a fast family favorite through the years! You can play with the recipe to suit your family's tastes, but this basic, simple recipe is a winner all by itself all the time!!! And it's a great supper dish to expand your usual recipe line up! ENJOY!"

  • Boil a pot of salted water and prepare noodles according to package directions.
  • In a frying pan, brown sausage. Drain fat.
  • Add remaining ingredients (except cheese) to the meat and simmer about 10 minutes.
  • When noodles are done, drain and place in serving bowl.
  • Remove bay leaf. Add meat mixture to noodles and toss to incorporate together.
  • Serve with grated parmesan cheese.

Having been born/bred in NJ and moving to WY, I've experienced a lot of change in my life! But cooking has always been a joy. I learned at my mother's knee, as she taught me when I started in high school and she started back to full-time work. By the time I graduated, I was doing most of the daily cooking at home and all my mother's friends were jealous! I would love to have a decent kitchen, and a decent 'audience" to cook for, but I'm limited by size and a "significant other" who thinks the only thing that's decent to eat is steak and potatoes! Creativity is out the window!
