- 2 tablespoons olive oil
- 1 cup chopped onion
- 1⁄2 lb of crumbled hot Italian sausage, skin removed
- 8 ounces sliced mushrooms
- 1 1⁄2 cups arborio rice
- 1⁄2 cup white wine
- 1 (14 1/2 ounce) can beef broth
- 1 (16 ounce) jar marinara sauce
- 2 cups water
- 1 cup frozen peas
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 cup shredded parmesan cheese
- 1⁄4 shredded fresh basil
directions
- Heat 2 tablespoons olive oil.
- Add chopped onion , sausage and mushrooms. Saute 6 minutes.
- Add Aborio rice; cooke one minute.
- Add white wine and cook 1 minute.
- Add beef broth, 1 jar of marinara sauce, 2 cups of water, peas and salt and pepper.
- Bring to a simmer.
- Cover; bake at 350 for 20 minutes.
- To serve, stir in parmesan cheese and basil.
