  • 8 medium potatoes
  • 34 lb sweet Italian sausage or 3/4 lb hot Italian sausage
  • 2 slices bread, soaked in water and squeezed dry
  • 3 tablespoons butter, divided
  • 1 tablespoon choppped parsley
  • 1 tablespoon stock
  • 1 egg yolk
  • 14 teaspoon salt
  • 14 teaspoon pepper (omit if hot sausage is used)

  • Preheat oven to 400°F.
  • Without peeling potatoes, boil for 10 minutes. Drain and peel. Using teaspoon, scoop out a deep hole for stuffing.
  • In medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk. Mix together well and carefully stuff into potatoes.
  • Assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes.
  • Serve hot.

I might have made this recipe incorrectly, but I made the assumption, that, even though Step 2 in the directions states that the boiled potatoes are to be drained & peeled, I didn't think that sounded right, so I left the peel on & simply cut them in half, as one would twice-baked potatoes, then scooped out some of the potato to within about 1/4 inch of the peel! I used a combo of sweet as well as mild Italian sausage! Also, rather than soaking the bread I just sprinkled them pretty well (just don't like really, really moist stuffing), then followed the recipe from then on! And, in spite of all the changes, we had a great tasting lunch! This will, in the future, be a great new way to serve stuffing & potatoes for company!
