Sausages & Bell Peppers

ingredients
- 2 lbs sausages
- 2 tablespoons olive oil
- 2 medium onions, coarsely chopped
- 2 red peppers, cut into strips
- 2 green peppers, cut into strips
- 2 garlic cloves, minced
- 2 medium tomatoes, quartered
- 1⁄2 cup tomato sauce
- salt and pepper
directions
- Prick sausages in several spots& simmer in a skillet of boiling salted water for 10 minutes; drain& slice lengthwise in half.
- Heat olive oil in skillet, brown sausages& finish cooking (about 5 minutes), remove from skillet& keep warm.
- Add onions, peppers& garlic to skillet; cook, stirring occasionally, for about 10 minutes.
- Stir in tomatoes& cook, stirring occasionally, for another 5 minutes or until veggies are cooked to your liking.
- Stir in tomato sauce, return sausages to skillet, season to taste& cook for an additional 5 minutes.

Quick, tasty and easy. I used red bell peppers and green peppers that are known as "Italian" peppers around here. I also used local sausage, longaniza, and was too lazy to go and buy tomatoes so I used a bit more tomato sauce! I also cooked the sauce for quite a long time, as I don't like my cooked peppers in any way hard. The sauce would be lovely, as CountryLady said, by itself, or even with veggie sausages.

I had some leftover grilled Sausages that I had in the freezer. I went on the Zaar to find what I could make with them and this sounded good. WOW! It was incredable. I cut up the sausage into 1" bits & served the whole dish over rice. The only thing I would do different next time is use a Hot/Spicy Sausage to give it a bit of a kick. Thanks for the great recipe.

This was absolutely wonderful. I have made sausage, peppers and onions before, but I never used this method. The boiling and adding garlic & fresh tomatoes were new for me. We had it as is and also on Italian rolls and it's just fabulous. I will confess that I used a can of pizza sauce instead of tomato sauce(I only had giant cans of tomato sauce and didn't want to open one for such a small amount). Other than that, followed to a "T" and it was really delicious. The kids can't wait to have more tomorrow! ;)

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
