- 1 pint grape tomatoes, halved
- 1 tablespoon light brown sugar
- 3 tablespoons balsamic vinegar
- 1⁄4 teaspoon salt
- 1 teaspoon olive oil
- 2 tablespoons thinly sliced fresh basil
directions
- 1. Sauté tomatoes and next 3 ingredients in hot oil in a small skillet over medium-high heat 2 to 3 minutes or until thoroughly heated. Remove from heat, and stir in basil.

I used an assortment of grape and cherry tomatoes from my garden along with fresh basil and this recipe was very good. Quick and simple too! Paired very well with tonight's dinner of broiled fish and roasted potatoes. I thought this might be a one-dinner recipe, but I will keep it to use again because of the excellent flavor. One caveat: The recommended 2-3 minutes was a little long for the tomatoes. I think 60-90 seconds would have been enough.
