ingredients
- 1 tablespoon olive oil
- 1 clove garlic, finely chopped
- 1 lb greens
- 1 tablespoon lemon juice
- salt & pepper
directions
- Wash greens, rinse, remove stems& set aside to dry.
- Heat oil in a large skillet over medium heat.
- Add garlic& cook for 30 seconds.
- Stir in greens, cover& cook for about 1 minute or until just wilted.
- Sprinkle with lemon juice and season to taste.

Oh wow!! I love spinach, but my husband doesn't usually care for it. He was crazy about it cooked this way! The garlic and the lemon gave a great flavour but what I particlarly liked was the texture! I used spinach (bought in a bag) that had been prewashed and was very dry. I didn't add any water and it was like a cross between fresh and cooked spinach. I can't believe my husband was still talking about how good the spinach was after dinner was over! Thank you Country Lady! Now I can have spinach more often without feeling guilty that I'm subjecting my DH to something he really doesn't like!

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
