  • 1 lb red potatoes
  • 3 tablespoons oil
  • 14 teaspoon salt
  • 18 teaspoon black pepper

Directions

  1. Wash all potatoes and slice into 1/8 - 1/4 inch slices.
  2. Saute potatoes in oil for a few minutes to coat well.
  3. Cover the pan and occassionally stir to allow the potatoes to brown.
  4. Cook for about 20 minutes this way.
  5. Add salt and pepper, and continue cooking for an additional 5 minutes with no lid stirring frequently.
