“This is supposed to be a side dish, but we serve it over pasta. The original recipe called for 20 ounces of fresh spinach, but we only had 10 ounces in the refrigerator and it was just fine with that amount.”

Directions

  1. Heat oil in a large skillet over medium heat. Add shallots and garlic and saute 1 minute.
  2. Add mushrooms and cook 3 to 5 minutes, until mushrooms are tender.
  3. Add sherry and soy sauce and bring to a simmer.
  4. Add spinach (add spinach in batches if necessary), and simmer 1 to 2 minutes, until spinach wilts, turning frequently.
