Savory Chicken

"I hardly make recipes more than several times, there are just too many new ones out there to try. Yet, this is a recipe I find myself making again and again. It adds the perfect crispness to the skin while flavoring the meat and keeping it moist. Do Not cover this with foil while cooking or the skin will never get crisp."

  • Mix all marinade ingredients, add meat.
  • marinade over night if possible.
  • Preheat oven to 400
  • roast the chicken, UNCOVERED, for 1 hour.
  • *this marinade is also delicious on pork, and even roasted red potatoes.

  1. I tried this recipe with 2 whole chickens and only had enough time to marinate for 6 hours. Doubled the amounts and used lime juice since I did not have lemons. Turned out great, adding this as a family favorite.
     
  2. I was a little worried about cooking this because I didn't have time to marinate and I was out of lemon juice. But it still turned out great! I made double the amt of chicken so i doubled each ingredient, sprinkled brown suguar on top of the chicken and reduced the cooktime to 45 mins. Everyone loved it, especially the kids!
     
  3. This was a very easy recipe that turned out very moist and tasty. It passed the family test so I am keeping it in my cookbook to put in my chicken recipe rotation. The only thing I would recommend is to spray the pan as the honey carmelized and clean-up was a little work.
