- 300 g canned corn
- 1 yellow bell pepper
- 1 garlic clove
- 50 g leeks
- 100 g potatoes
- 7⁄8 liter vegetable broth
- 2 tablespoons sour cream
- chili flakes
directions
- Cut up potatoes.
- Boil up the vegetable broth and add potatoes, corn, bell pepper, garlic, leek.
- Cook for 30 minutes, then puree the soup.
- Add sour cream. season with salt and pepper, sprinkle with chili flakes.

Rather than canned corn I used 2 cups of frozen corn (perhaps more than was called for) & seasoned the final dish with lemon pepper rather than the usual S&P! And, I don't know of the potato skins were supposed to be peeled off, but I didn't & just diced them pretty small, skin & all! Great tasting chowder, & certainly a keeper of a recipe ~ Thanks for posting it! [Made & reviewed in New Kids on the Block tag]
